Food has always been an important part of a stay at Augill with the dining room the beating heart of the castle. Wendy has been tutored by celebrated Italian chef Giancarlo Caldesi at his restaurant in London and before buying the castle Simon ran a modern British restaurant in London’s Mayfair.
Now we have been joined by Justin Woods who is taking our food to a new level. Justin comes from one of the Lake District’s top hotels, having started his career in Switzerland, he cut his culinary teeth under John Burton-Race at the two Michelin starred L’Ortolan restaurant in London and then worked up from commis to executing sous chef at The Lanesborough Hotel on London’s Hyde Park Corner. He lives locally with his family and is passionate about creating an authentic sense of place with his food.
His philosophy is simple:
“Let’s look at more local farmers and producers and really see what amazing things we can find in the Eden Valley and surrounding area – the best quality food, cooked simply in the friendliest atmosphere.”
It’s what we’ve always striven to do at Augill, only now it’s better.
